Power steering was an option back then.

It's quite likely to have power steering. This was an option, but it appears that most owners went for it. Some did go for the manual steering option; the manual steering used aluminum parts in place of cast iron, so it was a lot lighter. The typical Dodge power steering of that time feels so light it's like you are using a video game controller (without force feedback) rather than something connected to the suspension. If you don't like that feeling, you can replace the steering box with one from a Dodge Diplomat cop car or one of the aftermarket ones from Firm Feel.

Most musclecars had manual steering standard. This includes the Demon 340. While it is often said (here and elsewhere) that people often did not order PS because it zapped hp, the fact remains that most people used these cars for transportation and they were more concerned with drivability. On the other hand, for a bargain-basement car like a Demon 340, perhaps many people wanted to keep the bottom-line low.
Anyway, my statistics show that 51.7% of all Demon 340s built for the US (excluding Canadian and export cars).

I think it was an option back then as those are musclecars and a lot of guys didn't put any more weight on the car than they had to so they would be faster, I myself had a 71 demon brand new with the 318 and a 3 speed on the floor but I can't remember if it had power steering or not, that was a lot of years ago, I do know that for a 318 it was a fast little car.

Having had many different darts and dusters I would say it was an option. Also the 340 demon was a performance option and powersteering robs horsepower another reason it would have been an option.Dodge made 11,000 demons in 1971 it was the first year of the new dart body style a total of 81,000 darts were made in 1971 including demons.

the base model did not come with power steering but it was optional with all engine options from duce and a quarter six to the 360 offered the last year of [a] body production [before aspen]

It was probably optioned with it. If they bought the bigger engine then they probably spent a few more bucks for the power steering.
