Irish Coffee; 1 shot Jameson, 1 shot Bailey's, and coffee, top with whipped cream if you want.
Irish Car Bomb; fill a shot glass with 1/2 Jameson, 1/2 Bailey's. drop into a glass of Guinness, and Chug.

you could always try 'baby Guinness' shots. Lovely, or pour it over some ice cream, even better.
A while ago I saw some people in a bar here in Dublin putting a full shot glass of Baileys into a 3/4 pint of guinness, then drinking the last part in one. They assured me it was lovely.
that Irish martini sound delicious, I might give that a try myself

Irish Martini
1.5 oz Irish Whiskey
2 oz Irish Cream
2.5 oz cold strong coffee
Shake in a shaker with ice and serve in chilled cocktail glass, some shaved chocolate for a garnish is nice.

The drinks in green only require your bailey's + a non alcoholic mixer. The ones in red require additional liquor.

I usually drink it on the rocks or with coffee. My favorite is mixing it into a shake made with haagen-dazs bailey's ice cream though. delicious.
